Molokai purple sweet potatoes are a Hawaiian variety with vibrant purple flesh and skin. They are slightly drier and starchier than the more common orange-fleshed Garnet variety. The purple flesh darkens as it cooks, making them ideal for adding color to sweet potato fries, mashed sweet potatoes, or roasted. They have an extra sweet flavor and a very dry, starchy texture making them not so great for roasted potatoes but extra good for smash and pies!
