Averrhoa bilimbi (commonly known as bilimbi, pickle tree, or tree sorrel) is a fruit-bearing tree of the genus Averrhoa, family Oxalidaceae. It bears edible very sour but highly nutritious fruits. It is a close relative of the carambola tree. Small tropical tree reaching up to 15m in height. It is often used to give an acidic flavor to food, substituting lime, tamarind or tomato. This is essentially a tropical tree, less resistant to cold than the carambola, growing best in rich and well-drained soil (but also stands limestone and sand) needs protection from frost.
The bilimbi fruit displays an impressive nutrient profile. In addition to the fundamental essential components namely carbohydrates, fibres, proteins, these tangy fruits contain profuse amounts of vitamin C, B vitamins, calcium, iron, flavonoids, tannins and terpenes. It has been said to aide in managing diabetes, treating hypertension, remedying haemorrhoids, strengthening bones and soothing cough and cold.
