Sunchokes / Jerusalem Artichoke

Jerusalem artichokes, also called sunchokes, are knobby, nutty-tasting root vegetable. While the plant is growing edible roots, above soil it displays a beautiful yellow sunflower style flower. They are nutritious, rich in iron, and potassium. These can be eaten raw or cooked like potatoes (roasted, fried, mashed, or in soup). They are easy to grow and provide a versatile potato substitute.
